You can live off more than Noodles

Breakfast Bowties  Serves: 1
1/2 russet potato, shredded
1/2 cup bowtie pasta (farfalle)
2 T. chopped onion
1 egg
1/4 cup grated cheddar cheese
1 t. bacon bits
1 green onion, sliced (green part only)

1.) Boil the bowtie pasta according to package directions. Drain and set aside.
2.) Meanwhile, heat a small skillet over medium-high heat. Add a bit of butter (or cooking spray) and toss in the onion and shredded potato. Press with a spatula to spread the potato evenly over the skillet (like a pancake). Sprinkle with a pinch of salt and pepper and cook until one side is golden brown. Flip and cook the remaining side until golden. Remove from skillet and set aside.
3.) Add a bit more butter (or spray) to the same skillet. Crack in the egg and scramble with the spatula. Sprinkle with salt and pepper.
4.) In a bowl, toss together the pasta, potato, egg, bacon bits, and cheese. Season to taste with salt and pepper. Serve with sliced green onion on top.

Mac n' Cheese Frittata Serves: 1
2 eggs, beaten
1/2 cup cooked macaroni noodles
1/4 cup grated sharp cheddar cheese
1 T. breadcrumbs
Salt and pepper
1.) Preheat oven to 400.
2.) Heat a small skillet over medium heat. Spray with non-stick spray (or a dollop of butter) and add the beaten eggs. Cook and lifts the sides of the egg occasionally to let the uncooked egg set. When the top is almost set, add the cooked macaroni, cheese, and breadcrumbs. Sprinkle with salt and pepper.
3.) Add the skillet to the oven and cook for 1-2 minutes, or until cheese is melted and eggs are cooked.

PBR Chili Serves: 12 (party food, people!)
2 lbs. ground chuck
1 lb. italian pork sausage
1 yellow onion, chopped
3 15 oz. cans diced tomatoes (I used one with chiles for added heat)
1 15 oz. can tomato sauce
1 12 oz. can PBR (or any beer of your liking)
3 T. chili powder
1 T. cumin
2 t. salt
1 t. oregano
1/2 t. cinnamon
3 15 oz. cans black, pinto, or kidney beans (or a mixture of the three)
Sour cream and shredded cheese, to top

1.) Heat a large pot over medium-high heat. Add half of the beef and cook until thoroughly browned. Remove to a metal strainer set over a bowl to drain the fat. Add the remaining beef and repeat the process, then brown the sausage. Add all to the strainer and set aside.
2.) In the same pot, add the onions to drippings in the pot. Cook until golden, or about 5 minutes. Add the tomatoes, 2 cups water, tomato sauce, beer, chili powder, cumin, salt, oregano, and cinnamon. Stir, then bring to a boil. Add the beef and sausage, then partially cover the pot and simmer for 2 hours.
3.) Stir in the beans and heat through. Serve with sour cream and cheese.

First Day of School

The first day of school can be very overwhelming, but don't worry. The first day of school is a wonderful opportunity to meet new people. Many schools host "Welcome Weeks" and other back-to-school activities during this time. Here are a few tips to make your first day school a great one.

1.) Most teachers will hand out their syllabus for the course and let you know the agenda for the semester. Be prepared. Bring a notebook and pens. 

2.) If you haven't taken a tour of the campus today is your time to do it. During your break, take a tour of your campus and find your classes. 

3.) Eat lunch with someone other than your friends from high school. This is a great way to meet new people. 

4.) Exchange numbers/emails with another student in your course. This person can be your study buddy or keep you updated if you have to miss a day. 

5.) Check out some of the events your school is doing for the first week. There may be an organization fair, a casino night, a play, or more. 

6.) Have fun and don't stress. You're not the only one who is having a first day. :)

Master Schedule

My tips. It took me about two years to realize this, however I'm glad I did. My best tip is to invent your master schedule. I got in the habit of creating a master schedule during my sophomore year of college. I made a schedule every Sunday night and printed out. I kept the printed copy in a binder that contained my homework assignments. Example is below.




This is a simple way to keep your life organized for the week. My schedule went by the following information:
*Black Text= MWF class
*Burgundy Text=TR class
*Green Text=Work or Volunteer
*Blue Highlight=Special event
*Green Highlight(not shown)=homework assignment due
*Yellow Highlight=Meeting

If you stick to your schedule you can't go wrong during your college life.

Don't text at the Movies.

The Six Letter Word

When most of us get ready for college we think about the fun stuff. We prepare ourselves for the partying and going Greek. We can't wait to meet new people or get the chance to study abroad. We're so excited that we forget about our true reason for going. College is the next step in our journey to get a career and finally move out of our parent's house. College is about getting a DEGREE.

Partying and joining clubs is included in the college experience, but never forget that you're supposed to leave school with a degree. For some of us that takes a while, but if you want to leave in four years and not seven or eight take the following steps.

1.) Know what you're going to get your degree in. Some of us may not know, but pre-reqs can help you find that out.

2.) Study. It's okay to go to the parties, but set a study schedule an stick to it.

3.) If you are having trouble with something talk to your professor. They are  willing to help you achieve success in their class.

4.)Get organized. Keep all of your notes and assignments together. Also, keep all of your emails. They may come in handy later.

These are just a few tips for staying on top of things.
